Make them smile

Good morning and happy Wednesday,

I wanted to share this recipe with you because it is absolutely one of my families favorite!

This is technically a vintage recipe for banana espresso chocolate chip muffins. It was given to me over 20 years ago and if I ever lost it I would be heartbroken.

Well it is still February and although it isn't very cold it is a bit gloomy. I thought what a better way to cheer up the house then to have the aroma of banana espresso chocolate chip muffins wafting through the air. It's Presidents week and my children are off from school but they think it is some other holiday since mommy doesn't bake very often anymore. My baking days are few and far between so when they see this recipe come out of the cupboard they are certainly thrilled to say the least .  

Usually any free chance I get I am gleefully painting furniture, sewing or simply surfing on Pinterest for my next inspiration.

But today I'm going to do something for my children and share it with you !

2 1/2 cups of flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 salt

1 tablespoon espresso

1 3/4 cups mashed bananas

1cup softened butter

1 1/4 cups sugar

1 egg

1 3/4 Cup Ghiradelli chocolate chips


Preheat oven to 350

Grease pans


Stir together flour, baking powder, baking soda and salt.


In a separate bowl combine coffee and bananas - set aside


Large bowl / cream butter and sugar until light and fluffy beat in egg, add banana mixture stir in flour mixture , fold in chocolate chips

Bake until light brown !
